BRRR is it cold outside!  Warm yourself and your family right up with this simple stew.  Bonus: sweet potatoes are high in vitamins A and C, which can brighten your skin and help fight off winter colds and flu. 

Ingredients:
2 Tablespoons olive oil
1 medium onion, diced
pinch red pepper flakes
1 Tablespoon cumin
2 teaspoons dried oregano 
3 cloves garlic, minced
6 ounces chorizo sausage, hormone-free (optional)
1 bunch kale, washed and sliced in strips
2-3 medium sweet potatoes or yams, peeled and cut into thick slices
4 cups vegetable or chicken stock or water
sea salt and pepper

Directions:
1) Heat oil in a medium saucepan and saute onions until transluecent.  Add garlic, cumin, oregano, and red pepper and saute another minute, until fragrant.
2) Add chorizo and saute until browned (if raw)
3) Add stock, cover and bring to a simmer.  Add sweet potatoes and kale and simmer until cooked through and tender, about 20 minutes.  Add water as needed to cover sweet potatoes.
4) Season with salt, pepper and hot sauce to your taste.  Enjoy!
